Thai Basil Chicken Meatballs

Here's my take on a classic dish but with meatballs! Its easy to put together and so flavorful. Served with white jasmine rice, its's simple and delicious.

Ingredients:
Meatballs:
1 lb ground chicken
1 shallot finely chopped
3 cloves of garlic minced
1 tbs grated ginger
2 tbs chopped thai basil
1 birds eye chili
1/4 cup breadcrumbs
2.5 tbs low sodium soy sauce
1/2 tsp black pepper
Oil
Sauce:
3 tbs low sodium soy sauce
2 tbs oyster sauce
1 tbs fish sauce
1/4 cup vegetable broth
Stir fry:
1 shallot sliced
2 cloves of garlic
1 red bell pepper sliced
1/4 cup thai basil
1. Mix all the meatball ingredients together and form in equal sized balls.
2. Heat a pan or wok with about 3 tbs of neutral oil. Work in batches and brown all sides of the meatballs. Do not cook all the way. Set aside.
3. Mix sauce ingredients together in a small bowl.
4. Heat wok again keeping the oil and add shallot and garlic. Cook 2 mins and add red bell pepper.
5. Return meatballs back to wok and top with sauce. Lower heat and simmer to let meatballs completely cook through for 20 mins covered with lid.
6. Garnish with fresh thai basil and sliced birds eye chili.
Enjoy served over rice.
