A yummy Bengali snack! It is a salted rice flour dough, very simple and deliciously fried. Missed my mom so I asked her for the recipe. she said "olaa ektu", thanks mom that was not helpful at all haha. I just used my best judgment and this is honestly the first time I made it. Its a small batch, with enough to still freeze. Hope you enjoy it!

Ingredients:
1 cup of water
1 medium onion
1-2 inch ginger
1/2 tbs turmeric
2 tsp salt
1 tbs ghee
2 cups rice flour plus more for rolling
1/2 cup cilantro
Oil for frying
Slice onion and add into a blender with ginger. Depending on preference, add more or less ginger. I added all because I love the taste in this dough. Blend till smooth, added little water if needed.
In a pot add 1 cup water, turmeric, blended onion and ginger and salt.
Bring to a boil the add ghee. Add in rice flour. Stir.
You may need to adjust flour depending on the size of the onion used and water added to blend. Dough should not be too sticky, if it is add 1 tbs of flour at a time. Too dry, add a little water.
Cover with lid and let rest till dough is cool enough to handle with hands.
Generously flour a work station and dump dough and add cilantro. Knead very well and form into a disc.
Roll out to about 1/8 of an inch. Cut out with any shape cutter. Repeat with the scraps till there is no dough left.
Ready to fry! Heat oil well and add small batches at a time. Once they puff about 2 mins, flip and cook 1 more min.
Drain on a rack. Let cool slightly and enjoy!
If you are trying to freeze, on a tray lined with parchment paper place the uncooked pita without overlapping. Place into freezer for about 30 mins then transfer into freezer bags. No need to thaw when ready to fry up.
