Lamb Chop & Aloo Curry

Ingredients:

  • 2 lbs of lamb chops

  • 2 onions

  • garlic and ginger paste

  • salt

  • 1 tbs chili powder

  • 2 tsp turmeric

  • 2 tsp cumin powder

  • 2 tsp coriander powder

  • 1 tsp curry powder

  • 1 tsp garam masala

  • 1 stick cinnamon

  • 2 bay leaves

  • 3 potatoes

  • Water

  • Cilantro


1. Heat a pot with olive oil and add onions. Add salt and cook till soft. Add a dollop of garlic and ginger paste. About a tbs each.

2. Add all the dry spices.

3. Cook for a few minutes to heat the spices with the onions.

4. Add in lamb chops.

5. Toss and add cinnamon and bay leaves.

6. Let it hook on high for 10 mins, mixing often. Lower heat to medium-low with lid on and cook for 30-40 mins.

7. Add in chopped peeled potatoes. Cook for 5 mins. Add desired amount of water. I added 1.5 cups.

8. Increase heat and let it simmer till potatoes are soft. About 20 minutes. Garnish with cilantro. Serve with rice and a tomato salad and enjoy!
