Fried Rice

This is a go-to fried rice recipe. Not really sure what type of rice its considered. A little thai, a little chinese and a little me.

Ingredients: 1 lb chicken breast thinly sliced 2 eggs 2 cups of long grain rice cooked 1 medium onion sliced 2 cloves of garlic minced 1 bell pepper sliced 1 tomato chopped 1/2 cup of frozen peas and carrots 1 tsp chilli flakes 3 tbs soy sauce 1/2 - 1 tbs sambal oelek 2 tbs Sriracha 1/2 tbs fish sauce 1/2 lime juiced Salt and pepper Garlic powder Green onions and cilantro to garnish


1. Season chicken with salt, pepper and garlic powder and a couple of dashes of soy sauce and Sriracha on the chicken.


2. Heat a wok with olive oil and add eggs to scramble.


3. Set aside leaving access oil in the wok and cook the chicken next.


4. Set chicken aside. You may need to add a little more oil to finish off the rice.


5. Add in chilli flakes, stir and then add garlic and onions. Cook for another 2 mins and add in peppers.


6. Toss in carrots and peas along with the soy sauce, sambal oelek, Sriracha, fish sauce and lime juice. Stir.


7. Ready to add in the cooked rice. Make sure rice is cooled before this step. Steaming hot rice leads to mushy rice.


8. Toss it all together. Add in the chicken. And then the eggs.


9. Taste, add salt to preference.


10. Throw in the chopped tomatoes. We wanna add this in the end so it doesnt cook through and disappear.


11. Garnish with green onions and cilantro.

This is an easy recipe you can substitute the chicken with shrimp or use both. Add any veggies you like. Hope you enjoy!
