Desi spiced fried chicken & Parmesan scallion waffles

Sorry for the wait! I hope you make this and enjoy it as much as we do! I sure do miss NYC brunch. This isn't a terrible option to fill the void, buttermilk always, using my pantry spices, cheese and warm maple syrup!
Ingredients:
Chicken:
For the brine:
12 pc wings (6 cut in half) or any other chicken pieces!
2 cups buttermilk
2 tbs salt
1.5 tbs sugar
1 tsp garam masala
1 tsp coriander
1 tsp cumin
1/2 tsp black pepper
1/2 tsp chili powder
Coating:
1 cup all purpose flour
1 tsp garam masala
1 tsp coriander
1 tsp cumin
1 tsp black pepper
1/2 tsp turmeric
1/2 tsp chili powder
1/2 tsp salt
Oil for frying
Mix all the brine ingredients together. Pour into large ziplock bag and refrigerate 4 hrs - overnight.
In a large bowl, combine all the dry coating ingredients together. Using tongs, grab one piece at a time from brine and coat well in flour. Set aside.
Heat a heavy weighted pot or deep fryer with oil to 350 degrees.
Place wings into oil. Make sure not to crowd them and cook for 8-10 mins turning occasionally until golden and cooked through. (internal temp of 165 degrees)
Waffles:
1 egg separated
1/4 cup veg oil (more for waffle maker)
3/4 cup milk
1/2 tsp sesame oil
1/2 tsp salt
1/4 tsp sugar
1 cup flour
1 1/2 tsp baking powder
1/2 cup scallions
1/4 cup grated parmesan cheese
Waffle maker
Combine flour, salt, sugar and baking powder in a bowl.
Separate egg yolk and egg white. Whip egg white until it peaks.
In another bowl, combine yolk, milk, veg oil and sesame oil together.
Mix dry ingredients with milk mixture. Once combined, gently fold in whipped egg white. Add scallions and parmesan cheese.
Preheat waffler maker and brush with oil.
Add about 1/2 cup batter and cook until golden.
Serve waffles immediately with hot fried chicken and warm maple syrup. Enjoy!
