Ingredients:

1 cup of dried green or yellow peas

1 medium onion

1 tsp ginger

1 tsp garlic

1 tsp turmeric

1 tsp cumin

1 tsp corriander

1 Yukon potato peeled and cubed

Green chiles

Water

Salt


Toppings:

Cilantro

Peppers

Hard boiled sliced eggs

Red onions

Tamarind sauce

Fushkas/chips


  1. Soak peas overnight. Rinse well, drain and set aside.

  2. Heat a pot with 3 tbs oil. Add sliced onions, season with 1 tsp salt. Cook until translucent.

  3. Add garlic and ginger paste.

  4. Cook 2 mins. Add turmeric, cumin and corriander powder.

  5. Add peas and potato.

  6. Add chiles and 3 cups water.

  7. Bring to boil, mix and lower heat.

  8. Simmer till sauce thickens and peas are soft about 1 hr or so.

  9. Top with cilantro.


To serve, scoop peas into bowls. Top with favorites.
