Bengali Fried Rice

Bhath biran is a classic dish made with leftover rice and the ultimate Bengali trifecta of onions, chili peppers and cilantro. When in doubt, make anything with these 3 items and you have the most delicious biran always. Here I'll use leftover chicken curry and some veggies. Definitely space to play with whatever ingredients you want to add or leave out. Makes for a delicious and easy lunch!

Ingredients:
2 large eggs
1 medium onion (1 cup diced)
1 clove garlic
1-2 chili peppers
1 cup shredded chicken from leftover curry
1/2 cup frozen mixed vegetables of choice
3 cups of leftover cooked rice
2 tbs leftover curry gravy
Cilantro
Oil of choice
Salt to taste
Heat a wok/pan with 1 tablespoon of oil. Add eggs, scramble and set aside.
Add another 2 tbs of oil and add onion with about 1 tsp of salt. Cook until translucent.
Add garlic and peppers. Cook 1 min.
Add shredded chicken and cook until it gets nice and toasted.
Add frozen veggies and cook for 3 mins.
Add rice. Jasmine rice works best here. I had leftover parboiled Basmati. Anything works fine!
Toss in curry gravy. Mix well and let the rice get toasty.
Return eggs back to pan. Mix and adjust salt.
Top with cilantro.
Ready to serve! I add more chili on top cause I love the kick. Dried red peppers flakes work great here too!
